: Mexican pot pie

This spicy favourite was supplied by our friends at Mars Foodservice.

Ingredients (serves 10)
500g Uncle Ben’s Professional Mexican Chunky Salsa Sauce
1kg minced beef or lamb
2 red onions, chopped
3 cloves of garlic, chopped
600g chopped tinned tomatoes
400g tin kidney beans, drained
50g chopped parsley
Large bag of tortilla chips
Grated Cheddar cheese to garnish
Sour Cream to garnish
Oil for frying

Method
1. Preheat the oven to 200c/Gas mark 5
2. Soften the onions in a pan with a little oil
3. Add the garlic and cook for one minute
4. Add the beef or lamb and cook for a further five minutes
5. Add the tinned tomatoes, Uncle Ben’s Professional Mexican Chunky Salsa, parsley and kidney beans
6. Simmer for 20 minutes, season with salt and pepper
7. Divide into individual pots and top with tortilla chips
8. Sprinkle the grated cheese on top and bake in the oven for 10 minutes until golden
9. Garnish with more parsley and sour cream
