Recipe: Coffee rub steak wrap

Mission Plain Tortillas
Sirloin or ribeye steak
Grilled onions
Salad leaves
Chipotle paste
Lime juice
Salt (for seasoning)

Coffee Spice Rub For The Steak
1 tbsp Ancho chilli powder
2 tbsps Finely ground coffee
1 tsp Dark brown sugar
1 tbsp Smoked paprika
1 tsp Dried oregano
1 tsp Freshly ground black pepper
1tsp Ground coriander
1 tsp Mustard powder
1 tsp Ground ginger
1 tsp Sea salt

Season sirloin or ribeye steaks with salt then generously coat in the coffee spice rub
If possible, chill steaks for three to six hours (or overnight) to enhance the flours
Let steaks sit at room temperature for one hour before cooking
Sear in a very hot pan for two to four minutes each side (depending on personal preference)
Leave to rest for five minutes before slicing thinly
Pile into warm Mission Tortillas with grilled red onions, salad leaves and a dressing made with mayo, chipotle paste and lime juice
